Make Chip Wheelies

Chip Wheelies use chocolate chip cookies instead of chocolate wafers.


Chip Wheelies are ice cream sandwiches made with chocolate chip cookies and chocolate chip ice cream from Graeters Ice Cream shops. Instead of purchasing these from the store, make your own. To save time, use refrigerated chocolate chip cookie dough, but this can also be easily made with a homemade cookie recipe or baked cookies. Add this to my Recipe Box.


Instructions


1. Preheat the oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper to keep the cookies from sticking.


2. Use a cookie dough scoop or tablespoon to portion out rounded tablespoonfuls of chocolate chip cookie dough onto the parchment paper-lined baking sheet, leaving at least 2 inches of space between the cookies for spreading.


3. Bake the cookies for 8 to 12 minutes or until golden browned.


4. Cool the cookies on the baking sheet for two minutes. Transfer to a wire rack to cool completely.


5. Freeze the cooled cookies for at least one hour.


6. Remove the ice cream from the freezer to soften for 10 to 15 minutes before filling the sandwiches.


7. Spread 1 to 2 scoops of ice cream on the flat side of a single cookie. Use 1 scoop for a regular serving and 2 scoops for a double-stuffed cookie sandwich.


8. Place a second cookie on top of the ice cream with the flat side of the cookie against the ice cream.


9. Gently press the cookies together until the ice cream spreads to the edges of the cookies.


10. Smooth the ice cream around the sandwich with the spatula. Optionally, roll the edge of the sandwich in a pile of miniature chocolate chips.


11. Wrap each homemade Chip Wheelie in plastic wrap and freeze for at least 10 minutes before serving.
